A refreshing and vibrant salad featuring tender grilled octopus, paired with crisp arugula, juicy cherry tomatoes, and crisp cucumber, all drizzled with a zesty citrus vinaigrette. The perfect balance of flavours and textures for a light and satisfying dish.

Ingredients (Serves 4)

For the Salad:

  • 4 small octopus tentacles (or 2 whole octopuses, cleaned and cut into tentacles)

  • 4 cups arugula (rocket)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, thinly sliced

  • 1 small red onion, thinly sliced (optional)

  • Salt and pepper to taste

For the Citrus Vinaigrette:

  • 3 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tbsp fresh orange juice

  • 1 tsp Dijon mustard

  • 1 tsp honey or agave syrup (optional, for sweetness)

  • Salt and pepper to taste

Instructions

  1. Prepare the Octopus:

  • Bring a large pot of salted water to a boil. Add the octopus and cook for 30–45 minutes, depending on size, until tender.

  • Drain the octopus and let it cool slightly. Once cooled, grill the octopus over medium-high heat for about 2–3 minutes per side until charred and slightly crispy on the outside. Season with salt and pepper.

  1. Prepare the Salad:

  • In a large bowl, combine the arugula, cherry tomatoes, cucumber slices, and red onion (if using).

  1. Make the Citrus Vinaigrette:

  • In a small bowl or jar, whisk together the olive oil, lemon juice, orange juice, Dijon mustard, and honey (if using). Season with salt and pepper to taste.

  1. Assemble the Salad:

  • Slice the grilled octopus tentacles into bite-sized pieces and arrange them on top of the salad.

  • Drizzle the citrus vinaigrette over the salad and toss gently to combine.

  1. Serve:

  • Serve the salad immediately, garnished with additional herbs or citrus zest if desired.
