Roasted Cauliflower and Potato Salad
A vibrant and flavourful salad with roasted cauliflower and tender potatoes, complemented by a tangy tamarind dressing. The crunch of sunflower and pistachio seeds adds texture and depth, making this dish both hearty and refreshing.
Ingredients (Serves 4)
For the Salad:
1 medium cauliflower, cut into florets
4 medium potatoes, peeled and diced
2 tbsp sunflower seeds
2 tbsp pistachio seeds, shelled
1 tbsp olive oil
Salt and pepper to taste
For the Tamarind Dressing:
2 tbsp tamarind paste
2 tbsp honey or maple syrup
2 tbsp fresh lime juice
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp olive oil
1 tsp ground cumin
Salt and pepper to taste
Instructions
Roast the Vegetables:
Preheat the oven to (200°C).
Toss the cauliflower florets and diced potatoes with 1 tbsp olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast for 25–30 minutes, or until the vegetables are golden and tender, stirring halfway through.
Toast the Seeds:
In a small dry skillet over medium heat, toast the sunflower seeds and pistachios for 2–3 minutes, stirring constantly, until golden and fragrant. Remove from heat and set aside.
Make the Tamarind Dressing:
In a small bowl, whisk together the tamarind paste, honey/maple syrup, lime juice, soy sauce, olive oil, and cumin.
Add salt and pepper to taste and adjust the sweetness or tanginess by adding more honey or lime juice if desired.
Assemble the Salad:
In a large mixing bowl, combine the roasted cauliflower and potatoes.
Drizzle the tamarind dressing over the vegetables and toss gently to coat.
Serve:
Garnish the salad with the toasted sunflower and pistachio seeds.
Serve warm or at room temperature for a satisfying dish.
