Borscht Recipe
A hearty Ukrainian beet soup that serves 4, featuring fresh vegetables like beets, cabbage, and potatoes in a flavorful broth. This vegan-adaptable dish is both nutritious and low in calories, requiring about 40 minutes of cooking time.
Serves- 4 servings (~350g per serving)
Ingredients
Beets (300g), peeled and grated
Cabbage (150g), shredded
Carrot (100g), peeled and grated
Potato (200g), diced
Onion (100g), diced
Garlic (5g, 1 clove), minced
Tomatoes (200g), chopped (or 2 tbsp tomato paste)
Vegetable broth (1 liter)
Vinegar (15ml, 1 tbsp)
Sugar (5g, 1 tsp)
Olive oil (15ml, 1 tbsp)
Fresh dill (10g), chopped, for garnish
Sour cream (optional, 30g per serving)
Salt (to taste)
Black pepper (to taste)
Cooking Instructions
Prepare the vegetables:
Peel and grate the beets (300g) and carrots (100g). Dice the potatoes (200g) and onion (100g). Mince the garlic (5g) and chop the tomatoes (200g).
Cook the beets and vegetables:
Heat olive oil (15ml) in a large pot over medium heat. Add the diced onion (100g) and minced garlic (5g), cooking for 3-4 minutes until softened.
Add the grated beets (300g) and carrots (100g), and cook for another 5 minutes, stirring occasionally.
Add the rest of the ingredients:
Add the chopped tomatoes (200g) or tomato paste, shredded cabbage (150g), diced potatoes (200g), vegetable broth (1 liter), vinegar (15ml), and sugar (5g). Bring the soup to a boil, then reduce to a simmer and cook for 30-40 minutes until the vegetables are tender.
Season the soup:
Add salt and black pepper to taste.
Serve:
Ladle the soup into bowls (~350g per serving). Garnish with fresh dill (10g) and a dollop of sour cream (optional, 30g).
