Broccoli and Stilton Soup


A creamy and indulgent soup that pairs the earthy flavours of broccoli with the rich, tangy bite of Stilton cheese. This comforting British classic offers a perfect balance of vegetables and cheese, creating a luxurious, velvety texture and deep flavour. Ideal for a cozy lunch or light dinner.


Ingredients (Serves 4)

For the Soup:

  • 2 tbsp unsalted butter

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 500g broccoli florets (about 4 cups)

  • 1 medium potato, peeled and diced

  • 4 cups vegetable broth (or chicken broth for a non-vegetarian version)

  • 1 cup whole milk (or cream for a richer soup)

  • 100g Stilton cheese, crumbled

  • Salt and pepper to taste

For Garnish:

  • Crumbled Stilton cheese

  • Fresh parsley or chives, chopped (optional)

  • Crusty bread, for serving (optional)

Instructions

  1. Sauté the Vegetables:

  • In a large pot, melt the butter over medium heat.

  • Add the chopped onion and garlic and cook for 4–5 minutes, stirring occasionally, until softened and translucent.

  1. Add Broccoli and Potato:

  • Add the broccoli florets and diced potato to the pot, then stir to combine. Cook for 2–3 minutes, letting the vegetables soften slightly.

  1. Simmer the Soup:

  • Pour in the vegetable broth and bring to a boil.

  • Reduce the heat and let the soup simmer for 15–20 minutes until the broccoli and potatoes are tender.

  1. Blend the Soup:

  • Using an immersion blender or a countertop blender, blend the soup until smooth and creamy. If using a countertop blender, blend in batches and be careful with hot liquids.

  1. Add Milk and Stilton:

  • Return the blended soup to the pot and stir in the milk.

  • Crumble the Stilton cheese into the soup and stir until the cheese has melted into the soup, creating a creamy, cheesy texture.

  • Taste and adjust the seasoning with salt and pepper.

  1. Serve:

  • Ladle the soup into bowls, and garnish with extra crumbled Stilton cheese and chopped fresh parsley or chives.

  • Serve with crusty bread for dipping, if desired.
