Chicken and Chickpea Soup
A hearty and nourishing soup that combines tender chicken, protein-packed chickpeas, and a rich broth infused with aromatic spices and herbs. This comforting dish is perfect for any season, offering a balanced, flavourful meal in a single bowl.
Ingredients (Serves 4)
For the Soup:
2 boneless, skinless chicken breasts (or thighs)
1 can (400g) chickpeas, drained and rinsed
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 medium potato, peeled and diced
1 tsp ground cumin
1 tsp ground coriander
½ tsp smoked paprika
½ tsp turmeric
6 cups chicken broth (or vegetable broth for a vegetarian option)
1 tbsp olive oil
1 bay leaf
Salt and pepper to taste
For Garnish:
Fresh parsley or cilantro, chopped
Lemon wedges (optional)
Instructions
Prepare the Chicken:
Heat 1 tablespoon of olive oil in a large pot over medium heat.
Season the chicken breasts (or thighs) with salt and pepper, then brown them in the pot for about 4–5 minutes per side, until golden brown.
Remove the chicken from the pot and set it aside. Once cooled, shred the chicken into bite-sized pieces.
Sauté the Vegetables:
In the same pot, add the chopped onion, garlic, carrots, celery, and potato. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.
Add Spices:
Add the cumin, coriander, smoked paprika, and turmeric to the pot. Stir well to coat the vegetables with the spices and cook for an additional 1–2 minutes to toast the spices.
Simmer the Soup:
Add the shredded chicken, chickpeas, chicken broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low. Let the soup simmer for 20–25 minutes until the vegetables are tender and the flavours have melded together.
Final Seasoning:
Taste the soup and adjust the seasoning with salt and pepper if needed. Remove the bay leaf.
Serve:
Ladle the soup into bowls and garnish with fresh parsley or cilantro. Serve with a wedge of lemon on the side for an added citrusy kick (optional).
