Sopa de Lima (Mexican Lime Soup)


A light and zesty Mexican soup featuring shredded chicken, fresh lime juice, and crispy tortilla strips. This gluten-free, dairy-free dish serves 4 and provides a protein-rich meal at only 230 calories per serving.

Ingredients

  • Chicken breast (300g), cooked and shredded

  • Chicken broth (1 liter)

  • Fresh lime juice (60ml, 3 tbsp)

  • Corn tortillas (2), cut into strips

  • Tomatoes (150g), chopped

  • Onion (100g), chopped

  • Garlic (5g, 1 clove), minced

  • Jalapeño (1), seeded and chopped

  • Olive oil (15ml, 1 tbsp)

  • Salt (5g, 1 tsp), to taste

  • Black pepper (to taste)

  • Fresh cilantro (10g), chopped, for garnish

  • Avocado (50g), sliced, for garnish

  • Fried tortilla strips (optional)

Preparation Instructions

  1. Prepare the broth: In a large pot, heat olive oil (15ml) over medium heat. Add chopped onion (100g), minced garlic (5g), and chopped jalapeño (1) and sauté for about 5 minutes, until softened.

  2. Add tomatoes and broth: Add chopped tomatoes (150g) to the pot and cook for another 2-3 minutes. Then pour in 1 liter of chicken broth and bring to a simmer. Let it cook for about 10 minutes.

  3. Add chicken and lime juice: Add the shredded chicken (300g) and fresh lime juice (60ml) to the soup. Stir to combine, then simmer for an additional 5 minutes.

  4. Prepare the tortilla strips: In a separate pan, heat a small amount of oil and fry the tortilla strips (2 tortillas, cut) until crispy. Drain on paper towels.

  5. Serve: Ladle the soup into bowls (~300g per serving). Garnish with fresh cilantro (10g), sliced avocado (50g), and fried tortilla strips if desired.
