Chimichurri Shrimp Skewers


Serving Size: 3-4 skewers (approx. 200g)


Origin: Chimichurri is a vibrant, tangy sauce from Argentina, traditionally paired with grilled meats. This recipe uses chimichurri as a marinade for shrimp skewers, offering a flavourful, zesty twist.


Ingredients (Serves 4 | ~200g per serving)

  • For the chimichurri  marinade:

    • 1/2 cup Fresh parsley, finely chopped (20g)

    • 3 cloves Garlic, minced

    • 1/4 cup Red wine vinegar (60ml)

    • 1/4 cup Olive oil (60ml)

    • 1 tbsp Fresh oregano, chopped (5g)

    • 1/2 tsp Red pepper flakes (1g)

    • 1 tsp Ground cumin (2g)

    • 1/2 tsp Salt (2g)

    • 1/4 tsp Black pepper (1g)

    • 1 tbsp Lemon juice (15ml)

For the shrimp skewers:

  • 500g Large shrimp, peeled and deveined

  • 8-10 Wooden or metal skewers

Instructions

  1. Prepare the chimichurri marinade:

  • In a bowl, combine the chopped parsley (20g), minced garlic (3 cloves), red wine vinegar (60ml),  olive oil (60ml), chopped oregano (5g), red pepper flakes (1g), ground cumin (2g), salt (2g), black pepper (1g), and lemon juice (15ml).

  • Mix well until the ingredients are evenly incorporated.

  1. Marinate the shrimp:

  • Place the shrimp (500g) in a shallow dish or a resealable plastic bag. Pour the chimichurri marinade over the shrimp, ensuring all shrimp are coated.

  • Cover and refrigerate for at least 30 minutes (up to 2 hours) to allow the flavors to meld.

  1. Prepare the skewers:

  • If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning.

  • Thread the marinated shrimp onto the skewers, arranging them in a single layer.

  1. Grill the shrimp:

  • Preheat a grill or grill pan over medium-high heat.

  • Grill the shrimp skewers for 2-3 minutes on each side, or until the shrimp are opaque and slightly charred.

  1. Serve:

  • Serve the chimichurri  shrimp skewers hot with extra chimichurri sauce for dipping, along with grilled vegetables or a fresh salad.
