Cooking Instructions
Prepare the filling: • In a bowl, combine ground pork (200g), chopped shrimp (150g), finely chopped shiitake mushrooms (50g), minced ginger (10g), and green onions (30g). • Add soy sauce (15ml), sesame oil (10ml), cornstarch (10g), Shaoxing wine (15ml), oyster sauce (15ml), and salt (5g). Mix thoroughly until well combined.
Assemble the dim sum: • Place a small spoonful of the filling in the center of each dumpling wrapper (12-16 sheets). • Moisten the edges of the wrapper with water and fold the wrapper over the filling, pleating the edges to seal the dumpling. Repeat with the remaining wrappers and filling.
Steam the dim sum: • Bring a steamer or pot of water to a boil. Place the dumplings in the steamer basket, ensuring they don't touch each other. • Steam the dim sum for about 8-10 minutes, or until the filling is fully cooked.
Serve: • Serve the dim sum hot, with soy sauce and vinegar for dipping (~200g per serving).
