Spanish Tortilla (Tortilla Española)
A traditional Spanish dish made with simple ingredients: eggs, potatoes, and onions. The Spanish tortilla is a hearty, satisfying dish with a golden, slightly crispy exterior and a tender, creamy interior. Often served as a tapa, it can be enjoyed warm or at room temperature.
Ingredients (Serves 4 - Main Course or 6 - Tapas Portion)
For the Tortilla:
4 medium-sized potatoes (Yukon Gold or similar)
1 small onion, thinly sliced
6 large eggs
1/4 cup olive oil (for frying)
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions
Prepare the Potatoes and Onion:
Peel and thinly slice the potatoes (about 1/8-inch thick).
Thinly slice the onion.
Cook the Potatoes and Onion:
Heat 2 tablespoons of olive oil in a large skillet (preferably non-stick) over medium heat.
Add the potatoes and onions, seasoning with salt and pepper. Cook slowly, stirring occasionally, for about 15–20 minutes until the potatoes are tender and the onions are caramelized. The goal is to soften the potatoes without browning them.
Once done, use a slotted spoon to remove the potatoes and onions from the skillet and set them aside to cool. Reserve the oil.
Prepare the Egg Mixture:
In a large bowl, whisk the eggs and season with a pinch of salt and pepper.
Gently fold in the cooked potatoes and onions, making sure they’re evenly coated with the egg mixture. Let the mixture sit for 5 minutes to allow the flavors to meld.
Cook the Tortilla:
Heat the remaining 2 tablespoons of olive oil in the same skillet over medium-low heat.
Pour the egg, potato, and onion mixture back into the skillet, spreading it out evenly.
Cook for 6–8 minutes, occasionally shaking the skillet to prevent sticking, until the edges begin to set but the center is still slightly runny.
Using a large plate, carefully flip the tortilla over by placing the plate on top of the skillet and inverting it. Then, slide the tortilla back into the skillet, cooked side down.
Cook for an additional 4–5 minutes to cook through.
Serve:
Once the tortilla is cooked through and golden on both sides, remove it from the skillet. Let it rest for a few minutes before slicing.
Garnish with fresh parsley (optional) and serve warm or at room temperature.
